The salad dressing with cider vinegar and poppy seeds went very well with our salad of fresh lettuce, broccoli, spring onions, tomatoes, prawns and raspberries. However, it made such a huge quantity, we’ll be eating it for the rest of the week!
This is a great picture, Cat. I absolutely love the looks of it. We usually have some leftovers too. I try to prepare small enough amounts. Yet It is so easy to overdo it. More often than not we end up with more than we can eat. We say then, a third person could have been our guest. There would have been enough for a third person! đŸ™‚
The leftover dressing actually makes a very nice dip, and as we now have sweltering hot sunny days I shall cut some carrots, cucumber and red peppers into sticks, add cherry tomatoes and broccoli florets, a few crackers – and we have a healthy lunch!
